Ingredients For Feijoada for 80 people

  • 1/2 kg onion
  • 1 head garlic
  • 7 kg black beans
  • 400 g pork standing
  • 400 g pig's ear
  • 400 g pork tail
  • 4 kg smoked pork rib
  • 4 kg of beef – beef
  • 4 kg of paio
  • 1,600 kg bacon bacon
  • 5 kg of thin sausage

How to Make Feijoada for 80 People

Preparation of seasonings

Peel part of the onion and garlic, put in the blender and beat with a little water.

Prepare

Put half the preparation in each bean pot (two pots will be needed – see tips below). As a precaution, "cate" the beans to prevent any unwanted stone from going into the pan.

Cooking beans

Add hot water and place half the beans (3 kg and 1/2) in each pan (see below the size of them). Leave cooking over low heat for 4 hours in the recommended pans.

Preparation of meats

Chop all meats (except the paio, bacon and sausages), wash in running water to remove the coarse salt and soak in the water. Every 1 hour change the water to remove the salt (change 3 times). At the last minute, throw the water away and set aside. After the fourth hour of cooking the beans over low heat, add the meats and cook for another 3 hours. Turn off the fire and we finish the first day of feijoada

Next day preparation – other meats

The next day in the morning (7:00 am) turn on the low heat again and cook, will be at least another 5 hours until the start of lunch. Chop all the dad, bacon and the thin sausage. Boil the water and place the thin sausage inside. After boiling for 10 minutes, throw away the water and place the thin sausage in the pan with the beans (half in each). Repeat the previous process with the paio and leave the beans cooking over low heat.

Serve

Place the rice (which should be done in the part) and the feijoada for 80 people in the proper clay pots, heat on the stove and then serve the guests. Note: you will need about 6.5kg of rice to serve the 80 people.
